Two days in a row! I feel like I have to do this now or I might fall off the planet again. Have faith. Ireland will be back soon but in the meantime...
Tonight I had some Fro Yo from Ben and Jerry's. We used to support these kids way back when their ice cream shop was set up in a grandmother's garage and buying ice cream from them meant you brought your own container into which they scooped the stuff from freezer containers in big chest freezers. Tonight's treat seems to have returned the favor of helping put the boys through college.

You see, when I eat ice cream or drink cows milk, I get an upset stomach. In fact, it goes beyond upset stomach. It's not the lactose as so many believe but the problem is with a protein called casein. Apparently the yogurt has less and I am doing well so far. Casein is a close runner up in the atomic structuring that also gives us wheat, rye, and barley gluten (their structures are nearly the same) and that's why people with Celiac disease are often warned to steer clear of milk products. I keep reminding myself that almond milk and soy milk can be my friends.

Another problem with Celiac is the body's inability to absorb some nutrients like magnesium, potassium, phosphorus,...You're getting the idea by now, right? It's not easy to cope with life without some of this stuff and I'm coming to the realization that much of my summer could have been a nutritional problem. Oh fun, oh joy! For now, we experiment. Hey, what's life without a little experimenting, right?

Ah ice cream..yummy! I love it but don't eat it because it sends my sugar levels through the roof and i do not like having to inject rapid insulin to bring it down!!
I wonder if the gmo's are causing the ever increasing rates of celiac... Sorry you have to deal with that...
My dear Hawaiian doctor has strongly recommended that I cut way back on ice cream to low my cholesterol level. Bummer. I am sorry you have a condition that really upsets your stomach based on some things you eat. Our cleaning lady is on a very strict diet for similar reasons plus having sugar diabetes.

I love ice cream. I eat it when I have a sinus headache. Naturally the head ache improves because of the vasoconstriction of the blood vessels. I could eat a scoop anytime, even in the worst of winter. Crazy, no? And I love Ben & Jerry's ice creams.

@oceanstarr - There are so many new foods out on the market and if I pay attention, it's not a huge problem (although I must admit being sick of having to read every last little bit of labels). I've given that a lot of thought, too. It does seem that numbers have jumped as gmos expand. Research is now saying that 1 in every 100 now have it or something similar with only a small percentage of those diagnosed.
@ANVRSADDAY - My doctor and I have developed and understanding. My cholesterol has not varied at all in 35 years. Not by one point. However, the standards have lowered the recommended number and we have agreed to not worry about mine since it is well within the standard from 20 years ago when they lowered it. @ZSA_MD - Something I found interesting while living in England. So many people find the weather frustrating but I seldom wore a coat, never owned an umbrella, and really enjoyed my ice cream habit. I considered my eating ice cream there a contribution to the overall standard that stated that England had the greatest ice cream consumption of any country in the world. I was only doing my share. Thank you, Zakiah. It has helped a great deal. Not perfect, but helpful.
@History_Nut - I have this dream that a grocery will open up and contain no GMO's - but what is there to eat when you remove wheat, soy, and corn? lol... I know some packages say non-gmo soy, but how does one really know anymore? Once the stuff was put in the field, nature took over. Right now at least, I just avoid processed foods. That helps a lot.
I do take AGES in the store reading every last word lol
@oceanstarr - Don't forget that thee are always fresh fruits and veggies and they are gluten free. Fish and most meat (I say most because people with celiac are beginning to show a serious sensitivity to beef and it's believed to be from cross contamination when they are grain fed) and rice are okay. A lot of companies have realized there's money in them that hills with the gluten free diet craze and are making products without the use of wheat, rye, or barley. Some have even done it because a family member needed support when they learned they had celiac and that's even better because they understand what things can be missed in the normal everyday diet. We've even found a company that makes egg rolls and pot stickers. Even my favorite restaurant has jumped on the wagon and carries gf soy sauce and cooks with it on their grills. They discovered it was less expensive to use it than the other stuff. Reading labels is a pain in the rear and makes grocery shopping days exhausting but worth it.
I do understand nature taking over and that concerns me a lot. The pain and other things that come with this mess are not fun in the least.
@History_Nut - I'm not celiac - just anti GMO, but also trying to be vegetarian when I can (without offending hosts etc). It's tough to get produce that tastes ok to eat... I just miss living on the farm and picking my meals fresh lol... spoiled woman I am.
